2 medium sweet potatoes
1 T. canola oil

Cut sweet potatoes lengthwise into narrow strips. Toss in oil to coat lightly, or use an oil spray.  Bake in a 375° oven until soft and crisp on the outside, about 30 minutes.

We first had these at a restaurant in Austin where they are deep-fried and served mixed with regular French fries. When we have French fries, we make them in the oven like these.  White potatoes take less oven time.  These make a good appetizer with drinks; for eating with dinner, just baking the whole sweet potato is much easier and just as tasty.
